<trans-abstract xml:lang="en"><p>Antifreeze proteins are a class of proteins synthesized by poikilothermic organisms under cold stress. These proteins have random phylogenetic distribution, differ in primary and secondary structures, have different regulatory pathways, but they all display a common feature: the ability to be adsorbed onto the surface of ice crystals and to modify their growth. The review summarizes data on the origin of antifreeze proteins, activities and mechanisms mediating their action with emphasis on cereals, including wheat.</p></trans-abstract><kwd-group xml:lang="ru"><kwd>антифризные белки (АФП)</kwd><kwd>термогистерезис</kwd><kwd>ингибирование рекристаллизации льда</kwd><kwd>холодовая акклимация</kwd><kwd>закаливание</kwd><kwd>морозоустойчивость</kwd><kwd>злаки</kwd><kwd>пшеница</kwd></kwd-group><kwd-group xml:lang="en"><kwd>antifreeze protein (AFP)</kwd><kwd>ice recrystallization inhibition (IRI)</kwd><kwd>thermal hysteresis (TH)</kwd><kwd>ice-binding proteins</kwd><kwd>freeze tolerance</kwd><kwd>freeze avoidance</kwd><kwd>cold acclimation</kwd><kwd>protein structure</kwd><kwd>protein evolution</kwd><kwd>wheat</kwd></kwd-group><funding-group xml:lang="ru"><funding-statement>РФФИ, Госконтракт</funding-statement></funding-group></article-meta></front><back><ref-list><title>References</title><ref id="cit1"><label>1</label><citation-alternatives><mixed-citation xml:lang="ru">Самыгин Г.А.
